Kettering Soup

What exactly does “kettering” mean in Kettering Soup? Well, if you look it up in the dictionary, you’ll see things like “pleasing to the taste” and “sleepy.” And once you know that, it makes everything make so much more sense! This colorful combination of juicy beef, vibrant veggies, smooth beans, and spicy yet tangy seasonings are quite pleasing to taste. Ingredients

For the soup:

  • olive oil, to taste
  • 1 pound lean ground beef, turkey, or chicken
  • 1 medium onion, chopped
  • 1 (4-ounce) can diced green chiles
  • 1 (14.5-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can tomatoes with green chilies
  • 2 cups low-sodium beef broth or stock
  • 1 cup frozen corn or 1 (8-ounce) can corn, drained
  • 1 (15.5-ounce) can kidney beans, drained and rinsed
  • 1 (15.5-ounce) can black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 (1-ounce) packet taco seasoning mix
  • 1 (1-ounce) packet ranch dressing mix
  • salt, to taste

Optional toppings:

  • sour cream, to taste
  • black olives, to taste
  • cilantro leaves, to taste

Directions

Step 1 –In a large skillet over medium heat, add the oil.

Step 2 –Add the ground beef to the heated oil and cook, while crumbling, about 2-3 minutes. Drain any of the excess grease, as needed.

Step 3 –Add the onion to the beef and cook, about 1-2 minutes.

Step 4 –In a slow cooker, add the beef mixture, the diced green chiles and their juices, the crushed tomatoes and their juices, the tomatoes with green chilies and their juices, the beef broth, the corn, the kidney beans, the black beans, the chili powder, the taco seasoning, and the ranch dressing mix and stir well to combine.

Step 5 –Cook the soup, about 3-4 hours on high heat or about 4-6 hours on low heat.

Step 6 –Taste the soup and season with the salt, as needed. Stir to combine.

Step 7 –Serve the soup, topped with the sour cream, the olives, and the cilantro.
