Lemon Chicken and Asparagus has all of the above as well as sharp parmesan and tender onions. It’s a light and refreshing take on dinner that you can make in 30 minutes or less. Ingredients
- 4 medium chicken breasts, boneless and skinless
- 1 tablespoon Italian seasoning
- 1/2 teaspoon crushed chili pepper
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 cup onion, minced
- 1 pound asparagus, trimmed and cut into thirds
- 3-4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons lemon juice
- 1/4 cup parmesan cheese, optional
- 1/4 cup chicken stock, optional
Directions
Step 1 –Season the chicken with Italian seasoning, crushed chili pepper, salt, and pepper.
Step 2 –Add 1 tablespoon olive oil to a large skillet over medium heat.
Step 3 –Once the oil is heated, add the chicken to the pan and cook for 5-6 minutes per side.
Step 4 –Transfer the chicken from the skillet and set it aside.
Step 5 –Add the butter, onion, and asparagus to the skillet and cook until just tender, about 2-3 minutes.
Step 6 –Add the garlic and cook until fragrant, about 1 minute.
Step 7 –Add the heavy cream, lemon juice, and parmesan cheese, stirring to combine.
Step 8 –Return the chicken to the pan and simmer until the sauce has thickened and the chicken is cooked through, for about 3-4 minutes. Using a meat thermometer, check to make sure the chicken has an internal temperature of 165 degrees F.
Step 9 –Taste for seasonings.
Step 10 –If the sauce is too thick, add 1/4 cup chicken stock.
Step 11 –Serve hot.
