Mashed Potato and Chicken Casserole

Chicken, cheese, and mashed potatoes are a match made in heaven. After all, they leave a heavenly taste on your tongue! Mashed Potato and Chicken Casserole is a twist on multiple classic comfort foods in one easy-to-make dish! Crunchy on the outside and juicy on the inside chicken tenders, sitting atop creamy smooth cheddar cheese, with your favorite pillowy, hearty mashed potatoes. Once you top the whole thing with gravy, you have the very soul of home cooking in your hands!

Ingredients

  • 8 chicken tenders, frozen
  • 6 cups mashed potatoes, warm, homemade or premade
  • 1 cup corn
  • 1 cup cheddar cheese, grated
  • gravy, optional, warm, for serving

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Let the frozen chicken tenders thaw at room temperature for about 5 minutes. Once the chicken has softened enough to cut, cut them into slices of your desired size.

Step 3 –Spread the mashed potatoes on the bottom of a 9×13-inch casserole dish or baking pan.

Step 4 –Top the potatoes with the corn and cheese, aiming for an even spread.

Step 5 –Add the chicken slices on top of the corn and cheese.

Step 6 –Bake for about 20 minutes uncovered. Remove the casserole from the oven and top with your choice of gravy.

Step 7 –Serve warm!
