The beauty of Mashed Rutabagas is that when prepared right, they taste so much like potatoes! The only difference in terms of flavor is a slight, carrot-like sweetness that isn’t unwelcome! Mashed with rich butter and lightly seasoned, Mashed Rutabagas are a healthier, but still indulgent side dish that pairs well with anything mashed potatoes would accompany. Plus, they are so, so easy to make! Why worry about watching your waistline when making a healthy substitution like this is so easy?

  • 2-3 pounds rutabagas, peeled and chopped into chunks
  • 2 teaspoons salt, divided
  • 1/3 cup butter

Step 2 –Bring the water to a boil on the stove top.

Step 3 –Reduce the heat and cover, allowing the rutabagas to simmer until they are tender, about 25-30 minutes.

Step 4 –Drain and let the rutabagas dry in a colander or in the pan with the top ajar.

Step 5 –Mash the rutabagas with the remaining salt, the butter, and the black pepper.
