Meatless Monday Soup

Who needs meat when Meatless Monday Soup is on the menu and tastes so marvelous! Tender potatoes, bright vegetables, and a rich tomato broth can keep even the most devoted carnivore satisfied. It’s a simple but scrumptious soup with a little Creole zest added in for a bit of spice! Meatless Monday Soup might just become a regular favorite, even outside of Monday!

Ingredients

  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14.5-ounce) can vegetable broth
  • 1 (11.5-ounce) can tomato-vegetable juice cocktail
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 1 large potato, diced
  • 1 cup fresh green beans, chopped
  • 1 cup fresh corn kernels
  • 1 cup water
  • salt, to taste
  • pepper, to taste
  • Creole seasoning, to taste

Directions

Step 1 –In a large stockpot, combine the tomatoes, the vegetable broth, the tomato juice, the carrots, the celery, the potatoes, the green beans, the corn, and the water.

Step 2 –Season the mixture with the salt, the pepper, and the Creole seasoning.

Step 3 –Bring the mixture to a boil over medium heat and simmer until the vegetables are tender, about 30 minutes.

Step 4 –Serve.
