Ingredients

  • 2 strips bacon, diced
  • 4 scallions, chopped, greens and whites separated
  • 1 red bell pepper, chopped
  • 2 ears corn, husked, kernels cut from cob
  • 2 cups frozen baby lima beans, thawed
  • salt, to taste
  • pepper, to taste
  • 1/4 cup half-and-half

Directions

Step 1 –Cook the bacon in a large sauté pan over medium heat until brown and crispy, about 5 minutes.

Step 2 –Transfer the bacon to a plate and set it aside.

Step 3 –Add the scallion whites and the bell pepper to the bacon drippings and cook until the vegetables soften, about 3 minutes.

Step 4 –Stir in the corn and the lima beans and cook, stirring, until the corn is lightly toasted, about 3-4 minutes.

Step 5 –Reduce the heat to low.

Step 6 –Season the vegetables with the salt and the pepper.

Step 7 –Add the half-and-half and gently simmer until most of the liquid has evaporated and coats the vegetables, about 3 minutes.

Step 8 –Stir in the reserved bacon and the scallion greens.

Step 9 –Serve.
