Minnesota Hotdish

A Minnesota Hotdish can be anything so long as it features cream of mushroom soup and vegetables. Other than that, the dish is up to the maker. For this Minnesota Hotdish, we went with a more classic route of a crispy tater tot crust, complete with melted cheese and a beefy filling, and of course, a mushroom soup sauce. So, this dish has all the warmth and heartiness Minnesota can provide in its wonderful kitchens! Dig in and let the cold roll off of you!

Ingredients

  • 1 (28-ounce) package frozen tater tots
  • 1 pound ground beef
  • 1 yellow onion, finely chopped
  • 1 teaspoon garlic powder
  • salt, to taste
  • pepper, to taste
  • 2 (10-ounce) cans condensed cream of mushroom soup
  • 1 (10-12-ounce) package frozen mixed vegetables
  • 1 cup cheddar cheese, shredded
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Place the tater tots on a large baking sheet and bake until they begin to brown, but are not cooked through completely, about 10 minutes.

Step 3 –Transfer the tots from the oven.

Step 4 –Reduce the oven heat to 350 degrees F.

Step 5 –In a large frying pan over medium-high heat, add the beef and the onion and cook, while crumbling the meat, until the beef is browned, about 5-7 minutes.

Step 6 –Transfer the frying pan from the heat.

Step 7 –Mix the garlic powder, the salt, and the pepper into the beef mixture.

Step 8 –Add the cream of mushroom soup and the frozen vegetables and mix until combined.

Step 9 –Transfer the beef mixture to a 9×13-inch baking pan or casserole dish.

Step 10 –Top the beef mixture with the shredded cheese and the tater tots in a single layer.

Step 11 –Bake until the cheese is bubbly and the tater tots are nicely browned, about 40 minutes.

Step 12 –Serve hot, garnished with the parsley.
