Nana’s Bran Muffins

Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup buttermilk
  • 2/3 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease 12 muffin cups or line a muffin tin with paper muffin liners.

Step 3 –In a large bowl, mix the wheat bran and the buttermilk together and then let the mixture stand for 10 minutes.

Step 4 –While the buttermilk mixture is standing, in another bowl, beat the brown sugar, the oil, the egg, and the vanilla extract together until the mixture is light and fluffy.

Step 5 –Stir the sugar mixture into the buttermilk mixture.

Step 6 –In a bowl, whisk the flour, the baking soda, the baking powder, and the salt together.

Step 7 –Stir the flour mixture into the buttermilk mixture until it is just blended.

Step 8 –Fold the raisins into the batter.

Step 9 –Spoon the batter into the prepared muffin cups, filling each 2/3 full.

Step 10 –Bake until the tops of the muffins spring back when lightly pressed, about 15-20 minutes.

Step 11 –Cool the muffins in the tin and then transfer them to a wire rack to cool completely.

Step 12 –Serve.
