Monkey Bread Muffins

The ultimate in tear-and-share bread with double the share. Monkey Bread Muffins have the cinnamon sugar sweetness and richness of their full-sized brethren with the same flaky pull apart texture. Monkey Bread Muffins also offer a sweet glaze for extra indulgence. Grab these for a sweet breakfast on the go, but make sure you grab napkins as well!

Ingredients

  • 2 cups plus 2 tablespoons all-purpose flour
  • 3 tablespoons plus 1/2 cup granulated sugar, divided
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/3 cup plus 1 tablespoon milk, divided
  • 1/3 cup plus 6 tablespoons unsalted butter, divided and melted
  • 3/4 cup light brown sugar, firmly packed
  • 2 teaspoons ground cinnamon
  • 1/2 cup powdered sugar

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease or line a 12-cup muffin tin.

Step 3 -Using a large bowl add together the flour, the 3 tablespoons of the granulated sugar, the baking powder, and the salt with a whisk.

Step 4 -Pour in the buttermilk, 1/3 cup of the milk, and the 1/3 cup of the melted butter into the flour mixture, mixing with a fork or clean hands.

Step 5 -Pour the remaining granulated sugar into a medium-sized container with a lid.

Step 6 -Scoop out the dough 1 teaspoon at a time and drop it into the container with the sugar in an even layer, working in intervals.

Step 7 -Cover the container and shake it to coat the balls evenly.

Step 8 -Drop in 6 of the dough balls into each muffin cup. Repeat this process until all of the muffin cups are filled.

Step 9 -Add the remaining the melted butter, the brown sugar, and the cinnamon using a whisk until it is well-combined.

Step 10 -Pour about 1 tablespoon of the brown sugar mixture over each muffin.

Step 11 -Put the muffin tin onto a cookie sheet.

Step 12 -Bake until golden-brown, about 18-19 minutes. Let the muffins cool for 5 minutes in the muffin tin before transferring the muffins to a cooling rack.

Step 13 -Using a medium mixing bowl, add together the powdered sugar and the remaining milk using a whisk, mixing until it is well-blended.

Step 14 -Pour the icing mixture into a piping bag or resealable bag and drizzle the glaze over each muffin.

Step 15 -Serve!
