Nasi Goreng

One of the national dishes of Indonesia, Nasi Goreng, takes fried rice to new and delicious places. Infused with savory flavors from the soy sauce and shrimp paste and loaded with juicy chicken, Nasi Goreng is nourishing and incredibly gratifying to eat! Topped with a fried egg and fresh vegetables, this dish has everything you could want from fried rice and more! Plus, it only takes 20 minutes to make, so you’ll never need to worry about bland fried rice again!

Ingredients

For the rice:

  • 1 1/2 tablespoons oil, plus more as needed
  • 1 teaspoon red chili, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 small onion, diced
  • 5 ounces chicken breasts, thinly sliced
  • 3 tablespoons sweet soy sauce or kecap manis
  • 3 cups white rice, cooked, day old, and cold
  • 2 teaspoons shrimp paste, optional

For the garnishes:

  • 4 eggs, fried, to taste
  • 1 green onion, sliced
  • tomatoes, optional, cut into chunks, to taste
  • cucumbers, optional, cut into chunks, to taste
  • shallots, optional, fried, to taste
  • lime wedges, optional, to taste

Directions

Step 1 –Heat the oil in a large skillet or wok over high heat.

Step 2 –Add the chili and garlic and sauté until fragrant, about 10 seconds.

Step 3 –Add the onion and cook for 1 minute.

Step 4 –Add the chicken and more oil as needed to make sure everything is greased.

Step 5 –Cook the chicken until it turns mostly white, stirring, about 4-5 minutes.

Step 6 –Add 1 tablespoon sweet soy sauce.

Step 7 –Cook the chicken until it’s mostly cooked through and beginning to caramelize, for about 1 minute. The chicken should finish cooking as the other ingredients cook.

Step 8 –Add the rice, the remaining 2 tablespoons sweet soy sauce, and the shrimp paste.

Step 9 –Cook, stirring constantly, until the sauce reduces down and the rice begins to caramelize, for about 2 minutes.

Step 10 –Check the chicken to make sure it has reached a minimum internal temperature of 165 degrees F.

Step 11 –Serve with the eggs, green onion, and your favorite toppings.
