New Mexico Chicken Casserole

Ingredients

  • 3 cups chicken, such as breasts or thighs, boneless and skinless, cooked and shredded
  • 2 (4-ounce) cans chopped green chiles
  • 1 cup chicken broth
  • 1 (10.75-ounce) can condensed cream of mushroom soup, undiluted
  • 1 (10.75-ounce) can condensed cream of chicken soup, undiluted
  • 1 small onion, finely chopped
  • 12 corn tortillas, warmed
  • 2 cups cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, add the cooked chicken, the green chiles and their juices, the chicken broth, the cream of mushroom soup, the cream of chicken soup, and the onion and stir to combine.

Step 4 –Layer 1/2 of the tortillas on the bottom of the prepared baking dish, cutting them to fit as needed.

Step 5 –Pour 1/2 of the chicken mixture over the tortilla layer and sprinkle with 1/2 of the cheese.

Step 6 –Repeat the layers once, starting with the tortillas and ending with the cheese.

Step 7 –Bake the chicken casserole until it is heated through, about 30 minutes.

Step 8 –Serve.
