No-Bake Strawberry Pie

Nothing says it’s summertime like the first fresh batch of strawberries. And what better way to enjoy some delectable berries than with this No-Bake Strawberry Pie! Yummy! From the top to the bottom, this sweet slice-of-life has a buttery graham cracker crumb crust and is loaded with fresh, juicy strawberries, and flavorful strawberry gelatin, all whipped together with rich whipped cream for a light and fluffy, delightful treat. Topped with more whipped cream and ripe berries, this No-Bake Strawberry Pie will make strawberry shortcake a distant dessert memory. It’s easy to make and no-bake, so light, so fluffy, so fresh, and oh, so splendidly delicious!

Ingredients

  • 2 cups fresh strawberries, stems removed
  • 1 (3-ounce) package strawberry flavor gelatin
  • 2/3 cup boiling water
  • 1/2 cup cold water
  • ice cubes, to taste
  • 8 ounces imitation whipped cream, plus more, to taste, for serving
  • 1 (6-ounce) graham cracker crumb crust

Directions

Step 1 –Chop 1 cup of the strawberries into small pieces and place them in a bowl.

Step 2 –Cut the remaining 1 cup of the strawberries into slices and place them in another bowl.

Step 3 –Cover the bowls with plastic wrap.

Step 4 –Let the chopped strawberries sit at room temperature.

Step 5 –Transfer the sliced strawberries to the refrigerator.

Step 6 –In a large bowl, add the strawberry gelatin mix and the boiling water and stir until completely dissolved, about 2 minutes.

Step 7 –In a glass measuring cup, add the cold water and enough of the ice to make the total measurement equal 1 cup.

Step 8 –Add the iced water to the strawberry gelatin mixture and stir until slightly thickened. Discard any of the remaining ice cubes that are not melted.

Step 9 –Fold 8 ounces of the imitation whipped cream into the gelatin mixture until well-combined. Be sure not to overmix.

Step 10 –Add the chopped strawberries to the pie filling mixture and stir to combine.

Step 11 –Cover the pie filling mixture with plastic wrap and refrigerate until the mixture is very thick and can be mounded, about 20-30 minutes.

Step 12 –Evenly spread the pie filling into the crust.

Step 13 –Cover the strawberry pie with plastic wrap and refrigerate until firm, about 6 hours.

Step 14 –When ready to serve, top the pie with the extra imitation whipped cream and the sliced strawberries.

Step 15 –Slice and serve.
