Oodle Noodle Soup

Ingredients

  • 6 cups turkey stock
  • 1 bay leaf
  • 1 cup carrot, diced
  • 3/4 cup onion, chopped
  • 3/4 cup celery, diced
  • 2 cloves garlic, minced
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/4 cup parsley, chopped, plus more, to taste, for garnish
  • 1 1/2 cups no-yolk egg noodles
  • 2 cups turkey, leftover and shredded

Directions

Step 1 -In a large pot over medium heat, add the turkey stock, the bay leaf, the carrots, the onions, the celery, the garlic, the salt, and the black pepper and stir to combine.

Step 2 -Bring the soup to a simmer and cook until the vegetables are soft, about 10-15 minutes.

Step 3 -Add 1/4 cup of the parsley, the noodles, and the shredded turkey to the soup and cook until the noodles are al dente, about 5 minutes.

Step 4 -Remove and discard the bay leaf.

Step 5 -Garnish the soup with the extra parsley and serve.
