Ingredients
- 4 Roma tomatoes, sliced
- 1 cup parmesan cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup basil, chopped, plus more, to taste, whole leaves, for garnish
- 1 tablespoon olive oil
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Line an 18×26-inch baking sheet with parchment paper.
Step 3 –Add the tomato slices in a single layer, slightly separated, to the prepared baking sheet.
Step 4 –Evenly layer the parmesan cheese and the mozzarella cheese on top of each of the tomato slices, then sprinkle with 1/2 cup of the basil and drizzle evenly with the oil.
Step 5 –Bake the stacked tomatoes until the cheese is melted and bubbly, about 8-10 minutes.
Step 6 –Change the oven setting to broil and broil the stacked tomatoes until the cheese has browned, about 2-3 minutes.
Step 7 –Serve the stacked tomatoes, garnished with the extra basil leaves.
