Ingredients
For the sauce:
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon oyster sauce
- 1 tablespoon lime juice
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/2 teaspoon white pepper
- 1 teaspoon Asian chili sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon cornstarch
For the stir-fry:
- 1 tablespoon vegetable oil
- 1 pound of lean ground beef
- 6 cloves garlic, minced
- 1-2 jalapenos or serrano chili peppers, sliced
- 1/2 sweet onion, thinly sliced
- 1 small bell pepper, sliced
- 1 cup Thai basil leaves, picked off the stem, or regular basil
Directions
Step 1 –Whisk together the soy sauce, the fish sauce, the brown sugar, the oyster sauce, the lime juice, the coriander, the ginger, the white pepper, the chili sauce, the sesame oil, and the cornstarch in a small bowl.
Step 2 –Heat the vegetable oil in a wok or a large cast-iron skillet over medium-high heat.
Step 3 –Once the oil is rippling hot, add the ground beef, breaking up the beef a little and flattening it against the pan.
Step 4 –Allow the beef to cook undisturbed until it starts to sear, about 45 seconds.
Step 5 –Flip the beef and press flat again, searing on the other side, for about 30 seconds.
Step 6 –Crumble the beef into small pieces.
Step 7 –Drain the excess grease from the skillet.
Step 8 –Stir in the garlic, the chili peppers, the onion, and the bell pepper and stir fry for 2 minutes.
Step 9 –Stir the sauce mixture and then add it to the skillet, continue to stir fry for 2 minutes.
Step 10 –Add the basil and cook until the beef is fully cooked through with no pink remaining and the onions are tender, about 3 minutes.
Step 11 –Serve.
