Ingredients

For the chili:

  • 2 teaspoons canola oil
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 pounds lean ground beef, 90% lean
  • 2 (14.5-ounce) cans stewed tomatoes, undrained
  • 2 (8-ounce) cans tomato sauce
  • 2 (4-ounce) cans chopped green chiles
  • 1/2 cup fresh parsley, minced
  • 2 tablespoons chili powder
  • 1 1/4 teaspoons salt
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • rice or pasta, to taste, cooked and hot

For the optional toppings:

  • cheddar cheese, to taste and shredded
  • sour cream, to taste
  • green onions, to taste and sliced

Directions

Step 1 –In large skillet over medium-heat, heat the oil.

Step 2 –Add the green pepper, the onion, and the garlic to the oil, cooking and stirring until the veggies are tender, about 3-4 minutes.

Step 3 –Transfer the tender veggies to a 6-quart slow cooker.

Step 4 –In the same skillet over medium-high heat and working in batches, if necessary, cook the beef, breaking it into crumbles, until no longer pink, about 8-10 minutes.

Step 5 –Use a slotted spoon to transfer the cooked meat to the slow cooker.

Step 6 –Stir the tomatoes, the tomato sauce, the chiles, the parsley, the chili powder, the salt, the paprika, and the pepper into the beef mixture in the slow cooker.

Step 7 –Cook, covered, on low heat until the flavors are blended, about 6-8 hours.

Step 8 –Serve with the cooked rice and top with the cheese, the sour cream, and the green onions as you desire.
