Peanut Butter Banana Bread

Ingredients

  • 1/2 cup butter, softened, plus more, to taste, for greasing the pan
  • 1 cup sugar
  • 1/2 cup creamy peanut butter, divided
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 overripe bananas, mashed, plus more, to taste, sliced, for garnish

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Grease a 9×5-inch loaf pan with the extra butter and line it with parchment paper.

Step 3 –In a large bowl, add the sugar, the remaining 1/2 cup of the butter, and 1/2 of the peanut butter and mix with an electric mixer until light and fluffy.

Step 4 –Add the eggs, the vanilla, and the milk to the peanut butter mixture and mix until smooth.

Step 5 –Add the flour, the salt, the baking soda, and the baking powder to the batter and mix until just combined.

Step 6 –Fold the 3 mashed bananas into the batter.

Step 7 –Pour the batter into the prepared loaf pan.

Step 8 –Place the remaining peanut butter in a resealable plastic bag. Twist the bag to squeeze the peanut butter tight into one corner, then cut about 1/8-inch off of the corner of the bag.

Step 9 –Pipe three lines of peanut butter across the top of the batter, then drag a toothpick through the batter to swirl it in.

Step 10 –Bake the bread until a toothpick inserted into the center comes out clean, about 1 hour-1 hour 10 minutes.

Step 11 –Transfer the bread to a wire rack to cool in the pan, about 1 hour.

Step 12 –Slice the bread and serve garnished with the extra banana slices.
