Pull-Apart Pizza Bread

Woo! It’s Friday night so that means it’s pizza party time! Put down the takeout menu and step into your kitchen. Pull-Apart Pizza Bread is coming to play! No boxed pizza will ever compete with these perfectly fluffy and cheesy bites. Not only are they topped with melty mozzarella and spicy pepperoni, they’re FILLED with that, too! And if you’re feeling really wild, you can cover them with all your favorite supreme toppings, like crumbly sausage, sweet green peppers, and meaty black olives. Smother with a nice splash of garlic butter, dip in your favorite tangy pizza sauce, and sprinkle with fresh basil and a kick of red pepper flakes, and you’ve got yourself the perfect popper for any occasion! Ingredients

For the pizza bread:

  • 2 teaspoons yeast
  • 1 tablespoon granulated sugar
  • 3/4 cup whole milk, warmed to 110 degrees F
  • 3 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning blend
  • 2 3/4 cups bread flour, plus more as needed for a workspace, spoon and leveled
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup pepperoni, chopped

For the topping:

  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup pepperoni, chopped
  • 4 ounces ground Italian sausage, optional
  • 1/3 cup green peppers, optional, chopped
  • 2 tablespoons black olives, optional, sliced

For the garlic butter:

  • 2 tablespoons butter, melted
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder

Optional, for serving:

  • pizza sauce, to taste
  • fresh basil, to taste, chopped
  • crushed red pepper flakes, to taste

Directions

Step 1 –In the bowl of a stand mixer fitted with a dough hook or paddle attachment, add the yeast and the sugar.

Step 2 –Pour the warm milk over the yeast mixture and whisk gently to combine.

Step 3 –Loosely cover the bowl with a clean kitchen towel and allow it to sit until it becomes frothy, about 5-10 minutes.

Step 4 –Add 3 tablespoons of the melted butter, the egg, the salt, 1 teaspoon of the garlic powder, 1 teaspoon of the Italian seasoning, and 1 cup of the bread flour to the yeast mixture and beat on low speed to combine the ingredients, about 1 minute.

Step 5 –Add the remaining flour to the dough mixture and beat on low speed until the dough is soft, about 2 minutes. If the dough feels too sticky, add another tablespoon of the flour.

Step 6 –Transfer the dough to a lightly floured work surface and using lightly floured hands, knead it for 3 minutes. If the dough is too sticky to handle, add 1-3 tablespoons of the flour, but ensure the dough remains soft.

Step 7 –Shape the kneaded dough into a ball.

Step 8 –Place the dough in a greased bowl, cover with plastic wrap, and place in a slightly warm environment to rise until it has doubled in size, about 1 hour-1 hour 30 minutes.

Step 9 –While the dough rises, grease a 9-inch square pan.

Step 10 –In a bowl, mix 1 1/2 cups of the mozzarella and 1/2 cup of the pepperoni.

Step 11 –Punch the risen dough down to release the air.

Step 12 –Pinch off a piece of the dough that is about 1 1/2 tablespoons in size. Then, use your hands to form it into a ball and make an indentation in the center.

Step 13 –Pinch a scant tablespoon of the pepperoni mixture with your fingers and stuff it into the middle of the dough piece.

Step 14 –Press the dough around the pepperoni mixture to seal the filling inside, then place it into the prepared pan.

Step 15 –Repeat this process, starting by pinching a piece of dough and ending with placing it in the prepared pan, until the pan has been filled. There should be about 20-24 balls.

Step 16 –Cover the pan with plastic wrap and allow the balls to rise in a slightly warm environment until puffy, about 30-45 minutes.

Step 17 –In a small bowl, mix the remaining mozzarella and the remaining pepperoni together.

Step 18 –In a skillet over medium heat, add the sausage and the green peppers and cook, stirring and crumbling the meat into bite-size pieces, until the sausage is no longer pink, about 6-7 minutes.

Step 19 –Transfer the meat mixture to a paper-towel-lined plate to drain.

Step 20 –Combine the sausage mixture with the olives.

Step 21 –Adjust the oven rack to the lower third position.

Step 22 –Preheat the oven to 350 degrees F.

Step 23 –Bake the balls for 20 minutes.

Step 24 –Transfer the balls from the oven and sprinkle them with the mozzarella mixture and the sausage mixture.

Step 25 –Loosely tent the pan with foil and bake until lightly browned on top, about 12-15 minutes.

Step 26 –Transfer from the oven and allow the balls to cool.

Step 27 –While the balls are cooling, stir the remaining melted butter, the remaining Italian seasoning, and the remaining garlic powder together.

Step 28 –Brush the garlic butter over the warm rolls.

Step 29 –Serve the pizza balls with a side of the pizza sauce and sprinkle with the basil and the red pepper flakes.
