Munch on the perfectly toasted French baguette slices topped with the juicy, summery peach concoction that’s loaded with all sorts of fresh flavors. Your friends won’t believe that you’re the one who whipped up this impressive snack, and you’ll be filled with pride when you get to admit it was all you. Ingredients
- 1 French baguette, sliced into 1/4-inch-thick pieces
- 1/4 cup olive oil, divided
- 1 pound large peaches, diced
- 2 tablespoons fresh basil, chopped
- 1/4 teaspoon kosher salt
- 1/4 cup honey
- 1 teaspoon apple cider vinegar
- 1 teaspoon hot sauce
- 4 ounces goat cheese
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Line a baking sheet with parchment paper.
Step 3 –Lay the baguette pieces in a single layer on the prepared baking sheet.
Step 4 –Brush both sides of the baguette pieces with 3 tablespoons of the olive oil and bake until they are golden-brown, about 15-18 minutes.
Step 5 –While the baguette pieces are baking, in a medium bowl, toss the peaches, the basil, the salt, and the remaining oil together.
Step 6 –In a small bowl, whisk the honey, the vinegar, and the hot sauce together.
Step 7 –Top the bruschetta pieces with the goat cheese, the peach mixture, and the hot honey.
Step 8 –Serve.
