Radish Cucumber Salad

Ingredients

  • 1 large English cucumber, diced
  • 8 radishes, thinly sliced
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dill, chopped, plus more, to taste, whole sprigs, for garnish

Directions

Step 1 –In a large bowl, combine the cucumber, the radishes, and the feta.

Step 2 –In a small bowl, combine the olive oil, the lemon juice, the salt, and the pepper and briskly whisk to combine.

Step 3 –Drizzle the lemon vinaigrette over the veggie mixture and sprinkle with 1 tablespoon of the chopped dill. Toss to combine.

Step 4 –Let the salad rest for about 10 minutes.

Step 5 –Serve the salad garnished with the extra whole dill.
