Ranch Hand Supper

Ranch Hand Supper straddles the line between nachos, dip, and Sloppy Joes, much to your taste buds’ delight! Savory ground beef is mixed with smoky barbecue and tangy ketchup for maximum flavor, as well as baked beans for ultimate heartiness. Complete with creamy sour cream and melty cheese, Ranch Hand Supper is wonderful when scooped up with tortilla chips or spread across toast. You’ll be ready to head back to rustling after this dish!

Ingredients

  • 1 1/2 pounds of ground beef
  • 1 (28-ounce) can of baked beans
  • 1 (11-ounce) can of whole kernel corn, drained
  • 1/4 cup barbecue sauce
  • 2 tablespoons ketchup
  • 1 tablespoon prepared mustard
  • 3/4 cup cheddar cheese, shredded
  • green onions, optional, sliced, to taste
  • sour cream, optional, to taste
  • 7 cups tortilla chips

Directions

Step 1 –In a large skillet, cook the beef over medium heat until it is no longer pink, about 6-8 minutes.

Step 2 –Crumble the beef as it cooks.

Step 3 –Drain the fat from the skillet.

Step 4 –Stir in the baked beans, corn, barbecue sauce, ketchup, and mustard, and cook until heated through, for about 2 minutes.

Step 5 –Sprinkle in the cheddar cheese and cook until melted, about 2-3 minutes.

Step 6 –Garnish with green onions and sour cream.

Step 7 –Serve with tortilla chips.
