Red Deviled Eggs

It’s amazing what a single ingredient can do! The addition of roasted red peppers to deviled eggs, making Red Deviled Eggs, is just one example, but it might just be the tastiest! The filling of each deviled egg is creamy, tangy, sour, and zesty, with the roasted red peppers adding a note of sweetness and refreshment! Plus, they look like little pumpkins! There’s something to be said about cuteness in food, after all! Red Deviled Eggs are speedy, scrumptious, and just waiting for you to take a bite!

Ingredients

  • 8 large eggs
  • salt, to taste
  • 1/4 cup jarred chopped roasted red peppers, drained
  • 3 tablespoons mayonnaise
  • 2 teaspoons prepared mustard
  • 1/4 teaspoon paprika, plus more for sprinkling
  • pepper, to taste
  • chives, to taste, for garnish

Directions

Step 1 –Place the eggs in a pot in a single layer.

Step 2 –Cover the eggs with cold water, going about 1-inch above the eggs.

Step 3 –Place the pot over medium-high heat and add the salt once the water starts to bubble.

Step 4 –Bring the water to a rolling boil, being careful not to let it boil beyond that.

Step 5 –Cover the pot and turn off the heat.

Step 6 –Let the eggs sit in the hot water covered and undisturbed for 12-13 minutes, not starting the timer until right when the heat is turned off.

Step 7 –Transfer the eggs from the pot and rinse and peel them in cold, running water. You may want to place them in an ice bath first to make them easier to handle.

Step 8 –Slice the peeled eggs in half lengthwise and scoop out the yolks.

Step 9 –Place the yolks in a food processor with the red peppers, the mayonnaise, the mustard, and the paprika.

Step 10 –Process the yolk mixture until it is smooth, and taste for seasoning, adding the salt and the pepper as desired.

Step 11 –Transfer the yolk mixture to a pastry bag fitted with a large round tip, or to a large resealable plastic bag with a corner snipped off.

Step 12 –Pipe about 1 tablespoon of the filling into the center of each egg white, so each egg half looks like a pumpkin.

Step 13 –Use a toothpick to make the stripes of a pumpkin and set a piece of chive into the filling to make a pumpkin stem.

Step 14 –Sprinkle the eggs with the paprika and serve.
