Reunion Casserole

Let’s get everyone back together! Let’s head back to the old haunts and the old stomping grounds. Or better yet, let’s gather around the table and enjoy some Reunion Casserole together! This dish completely transforms the humble Brussels sprout into a full-fledged meal that will have you coming back for more: sautéed in rich butter, simmered in luscious heavy cream, and topped with melty, sharp, and smoky Gruyere and cheddar cheese and crispy bacon bits. Reunion Casserole reminds us of the best times, although the best times might just involve eating more Reunion Casserole.

Ingredients

  • 5 slices bacon
  • 3 tablespoons butter
  • 2 small shallots, minced
  • 2 pounds Brussels sprouts, halved
  • kosher salt, to taste
  • 1/2 teaspoon cayenne pepper
  • 3/4 cup heavy cream
  • 1/2 cup sharp white cheddar, shredded
  • 1/2 cup Gruyere, shredded

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large oven-safe skillet over medium heat, cook the bacon until crispy, about 8 minutes.

Step 3 –Drain the bacon on a paper-towel-lined plate.

Step 4 –Chop the bacon.

Step 5 –Return the skillet to medium heat and melt the butter.

Step 6 –Add the shallots and the Brussels sprouts to the melted butter.

Step 7 –Season the shallots and the Brussels sprouts with the salt and the cayenne pepper.

Step 8 –Cook, stirring occasionally, until tender, about 10 minutes.

Step 9 –Transfer the skillet from the heat.

Step 10 –Drizzle the vegetables with the heavy cream and top with the cheddar, the Gruyere, and the bacon pieces.

Step 11 –Bake until the cheese is bubbly, about 12-15 minutes. You can broil it for 1 minute to make sure the cheese is golden.
