Salad Casserole

So simple, so light, so yummy! Yep, that’s Salad Casserole for ya. Juicy red tomatoes get topped with some crispy, crunchy bread, a seasoned buttery drizzle, and melty parmesan cheese. It’s what we like to think of as the summer version of a casserole. It’s not too heavy, doesn’t take long at all, and it’s loaded with flavors of that beloved warm weather season. No matter the temperature outside, Salad Casserole is here to serve up the taste of summer fun!

Ingredients

  • 8 medium tomatoes, peeled and cut into wedges
  • 8 slices bread, crusts removed and cubed
  • 1/2 cup plus 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 3/4 cup parmesan cheese, grated

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 13×9-inch baking dish.

Step 3 –Arrange the tomatoes in the prepared baking dish.

Step 4 –Top the tomatoes with the bread cubes.

Step 5 –In a small bowl, combine the butter, the salt, the basil, and the thyme.

Step 6 –Drizzle the butter mixture over the bread and tomatoes.

Step 7 –Sprinkle the bread and tomato mixture with the cheese.

Step 8 –Bake, uncovered, until the tomatoes are tender and the cheese is melted and golden, about 30-35 minutes.

Step 9 –Serve.
