Savory Oatmeal Bake

We tend to think of oatmeal as an exclusively sweet dish, but it’s all about how you use it! This Savory Oatmeal Bake demonstrates how oatmeal can still be hearty and filling without all the sugar! Filled with garden-fresh broccoli, melty, rich cheese sauce, and even an egg for extra protein, this Savory Oatmeal Bake might just change how you look at oatmeal from now on!

Ingredients

  • 1/2 tablespoon butter
  • 5 teaspoons flour
  • 2 cups milk, divided
  • 1/2 cup Greek yogurt
  • 1 cup cheddar cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic, minced
  • 2 cups old-fashioned oatmeal
  • 3 cups broccoli, cooked and chopped
  • 1 egg
  • 1/2 teaspoon baking soda

Directions

Step 1 –Preheat oven to 350 degrees F.

Step 2 –Grease an 8-inch square baking pan or a 9-inch square cake pan.

Step 3 –Melt the butter in a medium nonstick skillet over medium-low heat.

Step 4 –In a separate bowl, whisk together the flour and 1/2 cup of the milk until completely smooth.

Step 5 –Add the flour mixture to the skillet, followed by the remaining milk.

Step 6 –Raise the heat to medium and cook until the sauce mixture is thickened, whisking constantly, about 7-10 minutes. If the flour begins to stick to the bottom, transfer the skillet from the burner and reduce the heat before moving the skillet back onto the burner.

Step 7 –Transfer the skillet from the heat.

Step 8 –Add the Greek yogurt, the cheese, the salt, the pepper, and the garlic and whisk until all the cheese is melted and the sauce reaches a smooth, creamy texture.

Step 9 –In a large bowl, combine the oatmeal, the broccoli, the egg, the baking soda, and the Greek yogurt mixture.

Step 10 –Once the mixture is well-combined, add it to the prepared pan.

Step 11 –Bake the oatmeal until it is fully set and a toothpick inserted into the middle comes out clean, about 30-35 minutes.

Step 12 –If desired, broil the oatmeal bake for 30 seconds-1 minute before transferring the pan from the oven to get an extra crispy top.

Step 13 –Let the oatmeal bake cool for 5 minutes.

Step 14 –Serve.
