  • 2 pounds baby red potatoes
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Cut the potatoes into 1-1/2-inch wedges.

Step 4 –Place the wedges in a large bowl with the onion and bell pepper.
