  • 8-16 slices thin-cut bacon
  • 16-32 small oysters (or scallops), or larger ones cut in half, shucked
  • lime or lemon wedges, to taste, for serving

Directions

Step 1 –Preheat the grill to high heat.

Step 2 –Cook the bacon slices on medium-low heat in a large frying pan, only until about halfway cooked and not yet crispy, about 3-4 minutes.

Step 3 –Slice the bacon strips in half.

Step 4 –Wrap a bacon piece around each small oyster, securing with a toothpick. Overlap the edges of the bacon by about 1 inch, if possible.

Step 5 –Grill or broil the wrapped oysters until the bacon is crisp, about 5-6 minutes on one side.

Step 6 –Flip the oysters and cook until cooked through, about 2-4 minutes.

Step 7 –Squeeze the lemon or lime wedges over the oysters immediately after they come off the heat.

Step 8 –Serve immediately.
