With the grill hot and ready and the cookout about to begin, it’s time to break out the best foot to bring forward! That would be these little darlings! Sidesaddle Angels are salty oysters wrapped in crisp, succulent bacon, grilled until tender, and then coated in bright citrus juice! Every one of these savory snacks is vibrant and meaty and oh-so-satisfying! Sidesaddle Angels might just upstage the rest of the cookout’s menu, so make sure you make enough for everyone!

Step 1 –Preheat the grill to high heat.

Step 2 –Cook the bacon slices on medium-low heat in a large frying pan, only until about halfway cooked and not yet crispy, about 3-4 minutes.

Step 3 –Slice the bacon strips in half.

Step 4 –Wrap a bacon piece around each small oyster, securing with a toothpick. Overlap the edges of the bacon by about 1 inch, if possible.

Step 5 –Grill or broil the wrapped oysters until the bacon is crisp, about 5-6 minutes on one side.

Step 6 –Flip the oysters and cook until cooked through, about 2-4 minutes.

Step 7 –Squeeze the lemon or lime wedges over the oysters immediately after they come off the heat.

Step 8 –Serve immediately.
