Ingredients

  • 2 pounds chicken breasts, boneless and skinless
  • 1/2 pound fresh green beans, trimmed
  • 1 1/4 pounds red potatoes, diced
  • 1/3 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 2 garlic cloves, minced

Directions

Step 1 –Arrange the chicken breasts in the center of the slow cooker.

Step 2 –Place the green beans and the potatoes around the chicken.

Step 3 –In a mixing bowl, whisk to combine the lemon juice, the olive oil, the salt, the oregano, the pepper, and the minced garlic.

Step 4 –Pour the lemon mixture over the chicken-veggies in the slow cooker.

Step 5 –Secure the lid on the slow cooker and cook for 4 hours on high or 7 hours on low.
