  • water, to taste
  • 8 ounces dark or semisweet chocolate, chopped
  • 1 (16-ounce) container heavy whipping cream, very cold
  • 3 egg whites, room temperature
  • 1/2 cup powdered sugar


Step 1 –Fill a large pot halfway with the water and bring it to a boil.

Step 2 –Transfer the pot from the heat.

Step 3 –In a heatproof bowl small enough to fit inside the pot with the water, add the chocolate.

Step 4 –Place the bowl in the hot water, but be careful not to let the water get into the bowl with the chocolate.

Step 5 –Let the bowl sit in the hot water until the chocolate is melted.

Step 6 –In a large mixing bowl, add the heavy cream and, using an electric hand mixer, beat on medium speed until soft peaks form.

Step 7 –In a separate large bowl, add the egg whites and, using a clean electric hand mixer, beat on medium speed until soft peaks form.

Step 8 –Add the powdered sugar to the egg whites and beat them together until stiff peaks form.

Step 9 –Gently fold the egg white mixture into the melted chocolate in thirds, ensuring that you are gentle to prevent the air from being knocked out. Fold until no white streaks remain.

Step 10 –Gently fold the whipped cream into the melted chocolate mixture in thirds, taking special care to prevent the air from getting knocked out. Fold until no white streaks remain.

Step 11 –Transfer the mousse to a serving dish.

Step 12 –Refrigerate the mousse until chilled, about 1 hour.

Step 13 –Serve.
