Smothered Cheesy Sour Cream Chicken

Creamy, melted mozzarella, sharp parmesan, and herby, tangy sour cream all slathered over juicy chicken — “stick to your ribs” doesn’t do this recipe justice. Smothered Cheesy Sour Cream Chicken is more like “stick to the table until every bite is gone.” You’ll love it so much you may not even have room for dessert! Smothered Cheesy Sour Cream Chicken takes a little patience to make, but the effort is more than worth it!

Ingredients

  • 1/8 teaspoon olive oil
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 3/4 cup parmesan, grated, divided
  • 4 chicken breasts, boneless and skinless
  • 4 slices mozzarella
  • parsley, optional, to taste, chopped, for garnish
  • rice, optional, to taste, cooked and warm, for serving

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat a rectangular baking dish with the olive oil.

Step 3 –In a medium bowl combine the sour cream, the salt, the pepper, the oregano, the basil, the garlic powder, the cornstarch, and 1/2 cup of the parmesan cheese. Set the sour cream mixture aside.

Step 4 –Place the chicken breasts into the prepared baking dish.

Step 5 –Top each of the chicken breasts with a slice of the mozzarella.

Step 6 –Evenly coat the chicken breasts with the sour cream mixture.

Step 7 –Top the chicken breasts with the remaining 1/4 cup of the parmesan cheese.

Step 8 –Cook until the chicken breasts reach 165 degrees F with a meat thermometer, about 1 hour.

Step 9 –Garnish with the chopped parsley and serve over the rice.
