Southwest Spaghetti Bake

Ingredients

  • 12 ounces spaghetti, uncooked
  • 1 pound ground beef
  • 1 (1-ounce) envelope taco seasoning
  • 3/4 cup water
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) can tomatoes and green chiles, diced, undrained
  • 2 cups Mexican cheese blend, shredded, divided
  • 2/3 cup salsa

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Break the spaghetti into thirds.

Step 4 –In a large pot of salted boiling water, cook the spaghetti to al dente, according to the package directions. Drain the spaghetti and set aside.

Step 5 –While the spaghetti is cooking, in a Dutch oven over medium-high heat, cook and stir the ground beef until it is browned and crumbly, about 5-7 minutes. Drain the excess grease.

Step 6 –Add the taco seasoning and the water to the ground beef, bring to a boil, then reduce heat and simmer, stirring occasionally, about 5 minutes.

Step 7 –Add the black beans, the diced tomatoes, 1 cup of the cheese, and the salsa to the ground beef mixture. Mix well and continue to simmer.

Step 8 –Add the cooked spaghetti to the ground beef mixture and toss to combine.

Step 9 –Transfer the spaghetti mixture to the prepared baking dish and bake, covered, about 20 minutes.

Step 10 –Sprinkle the spaghetti mixture with the remaining cheese and bake, uncovered, until the cheese has melted, about 3-5 minutes.

Step 11 –Let the spaghetti mixture stand for 5 minutes.

Step 12 –Plate and serve.
