Spiced Toffee Cookies

There are ordinary gingerbread cookies and then there’s these marvelous little bites of magic! Spiced Toffee Cookies are loaded with crunchy toffee bits and nestled into the warm, spiced, tender cookie. Smoky, sweet, and buttery, Spiced Toffee Cookies are like a holiday for your taste buds! In fact, these are a winter wonderland of flavor ready during any month!

Ingredients

  • 3/4 cup butter, softened
  • 1 1/2 cups sugar, divided
  • 1 tablespoon toasted wheat germ
  • 1/4 cup molasses
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1 cup brickle toffee bits

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large bowl, add the butter, 1 cup of the sugar, and the wheat germ and beat until it is light and fluffy, about 5-7 minutes.

Step 3 –Add the molasses and the egg and beat to combine.

Step 4 –In a separate bowl, add the flour, the baking soda, the cinnamon, the ginger, the salt, and the cloves and whisk to combine.

Step 5 –Gradually beat the flour mixture into the butter mixture until just combined.

Step 6 –Fold in the toffee bits.

Step 7 –Shape the dough into 1 1/2-inch balls.

Step 8 –Roll the dough balls in the remaining sugar.

Step 9 –Place the sugared dough balls 2 inches apart on ungreased baking sheets.

Step 10 –Bake until set, about 9-11 minutes.

Step 11 –Cool the cookies on the sheets for 2 minutes.

Step 12 –Transfer the cookies to wire racks to cool completely.

Step 13 –Serve.
