Ingredients
- 4 tablespoons unsalted butter, softened
- 1/2 cup vegetable oil
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar or dark brown sugar, packed
- 2 teaspoons vanilla extract
- 1/2 teaspoon espresso powder, optional
- 3/4 teaspoon table salt
- 1 tablespoon cider vinegar
- 1 large egg
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 cups white whole-wheat flour
- 2 2/3 cups semisweet chocolate chips
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Lightly grease two baking sheets.
Step 3 –In a large bowl, add the butter, the oil, the granulated sugar, the brown sugar, the vanilla, the espresso powder, and the table salt and beat together until combined and smooth.
Step 4 –Add the vinegar, the egg, the baking soda, and the baking powder to the butter mixture and beat to combine.
Step 5 –Add the flour to the butter mixture and stir until just combined.
Step 6 –Fold the chocolate chips into the dough. Don’t worry if the dough seems oily or not cohesive, that’s normal.
Step 7 –Drop the dough by the tablespoonful, about 1 inch apart, onto the prepared baking sheets.
Step 8 –Bake until the cookies are an even golden-brown, about 15-17 minutes.
Step 9 –Allow the cookies to cool on the baking sheets for 5 minutes.
Step 10 –Transfer the cookies to a wire rack to cool completely.
