Stay-At-Home Dinner

Not only do you get to stay in your comfy clothes with this one, but you also get to chow down on some juicy chicken and tender peas mixed in with a bit of fluffy rice. It’s all coated in a deliciously sweet and tangy sauce to add a little pizzaz to your evening at home. Nothing can make you feel cozier than this Stay-At-Home Dinner! Cuddle up and enjoy!

Ingredients

  • 1/2 cup frozen peas
  • 1 (8.8-ounce) package brown or white rice
  • 1 tablespoon olive oil
  • 1 pound chicken breast tenders, boneless and skinless, halved crosswise
  • 1/4 cup bottled stir-fry sauce
  • oven-roasted sliced almonds, to taste, store-bought or homemade, for garnish

Directions

Step 1 –Stir the peas into the rice package and heat in the microwave, according to the package directions.

Step 2 –In a large skillet over medium-high heat, add the oil and the chicken pieces and cook until they reach an internal temperature of 165 degrees F and the juices run clear, about 2-3 minutes.

Step 3 –Stir the rice mixture and the stir-fry sauce into the chicken pieces and cook until it is heated through.

Step 4 –Serve the chicken-rice mixture sprinkled with the almonds.
