Strawberry Coffee Cake

Ingredients

  • 1/2 cup butter, softened, divided
  • 1 1/4 cups white sugar, divided
  • 1 egg
  • 2 cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1 1/2 cups strawberries, thinly sliced
  • 1/4 cup flaked coconut

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9-inch baking pan.

Step 3 –In a mixing bowl, add 1/4 cup of the butter and beat until it is creamy.

Step 4 –Add 3/4 cup of the sugar and the egg to the butter and beat until fully incorporated.

Step 5 –In a medium bowl, combine 1 1/2 cups of the flour, the baking powder, and the salt.

Step 6 –Alternate adding the flour mixture and the milk to the butter mixture and stir until combined.

Step 7 –Pour the batter into the prepared baking pan and arrange the strawberries on top.

Step 8 –In a medium bowl, combine the remaining flour, the remaining sugar, the remaining butter, and the coconut.

Step 9 –Sprinkle the coconut mixture over the strawberries.

Step 10 –Bake the cake until a toothpick inserted into the center of the cake comes out clean, about 35 minutes.

Step 11 –Serve.
