Ingredients
- 1 tablespoon cocoa powder
- 2 teaspoons chipotle powder
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon freshly ground black pepper
- 2 (1-inch-thick) ribeye steaks
- 2 tablespoons olive oil
- 1 tablespoon salted butter
- mixed greens or salad, optional, to taste, for serving
Directions
Step 1 –Mix the cocoa powder, the chipotle powder, the salt, the garlic powder, the brown sugar, the paprika, the cayenne, and the black pepper together in a small bowl.
Step 2 –Generously sprinkle the steaks with the spice rub.
Step 3 –In a large cast-iron skillet over medium-high heat, heat the oil and the butter.
Step 4 –Add the steaks and cook until medium-rare with the meat reaching an internal temperature of 135-140 degrees F, about 4 minutes per side.
Step 5 –Transfer the steaks to a cutting board and let them rest for 5 minutes.
Step 6 –Slice the steaks against the grain and serve with the mixed greens.
