Ingredients

For the angel food cake:

  • 1 1/4 cups watermelon purée
  • 1 lime, zested and juiced
  • 1 box angel food cake mix

For the honey-lime yogurt sauce:

  • 1 cup plain Greek yogurt
  • 1/4 cup honey
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest, plus more, to taste, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a mixing bowl, add the watermelon purée, the zest from 1 lime, the juice from 1 lime, and the cake mix and combine with an electric mixer on low speed.

Step 3 –Increase the mixing speed to high and mix until the batter is light and fluffy, about 1 minute.

Step 4 –Pour the batter into an ungreased fluted cake pan.

Step 5 –Bake the cake until the top is brown with dry cracks, about 35-45 minutes.

Step 6 –Transfer from the oven and immediately invert the fluted cake pan onto a long-necked bottle or other item that will support the pan to prevent the cake from collapsing.

Step 7 –In a bowl, stir the Greek yogurt, the honey, the remaining lime juice, and the remaining 1 teaspoon lime zest.

Step 8 –Serve the cake with the honey-lime yogurt sauce and garnish the cake with the extra lime zest.
