Ingredients
- 1 tablespoon olive oil
- 4 chicken breasts, boneless and skinless
- salt, to taste
- pepper, to taste
- 1 (10-ounce) package cherry tomatoes, halved
- 3 tablespoons pesto
- 3 tablespoons crème fraîche
- fresh basil, to taste
Directions
Step 1 –Heat the oil in a non-stick frying pan over medium-high heat.
Step 2 –Add the chicken and fry until golden brown and cooked through at 165 degrees F, about 6-7 minutes per side.
Step 3 –Season the chicken with the salt and the pepper.
Step 4 –Add the tomatoes to the pan, stirring until they soften, about 4-5 minutes.
Step 5 –Reduce the heat to medium-low.
Step 6 –Stir in the pesto and crème fraiche and cook until thickened, about 3-4 minutes.
Step 7 –Serve with the basil.
