Summer Squash Bake

You know when the zucchini comes in, it comes in with a vengeance; there’s always so much of it! Thankfully, Summer Squash Bake makes it easy to fall in love with summer’s most ubiquitous vegetable! The juicy zucchini, the chicken, and the melty cheese in a creamy, tangy sauce would be amazing on its own, but the golden-brown stuffing topping just makes everything so much more homey and more delicious. This Summer Squash Bake tastes like the summer season in dinner form!

Ingredients

  • 6 ounces boxed stuffing mix
  • 1/2 cup butter, melted
  • 4 zucchinis, diced into bite-sized pieces
  • 3 chicken breasts, boneless and skinless, cooked and diced
  • 1/2 cup mozzarella cheese, optional, shredded
  • 1 (10.5-ounce) can cream of chicken soup
  • 1/2 onion, diced
  • 1/2 cup sour cream

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×13-inch glass pan with nonstick cooking spray.

Step 3 –In a large bowl, combine the stuffing mix and the melted butter.

Step 4 –Reserve 1/2 cup of the stuffing mixture for the topping.

Step 5 –Add the zucchini, the chicken, the mozzarella, the cream of chicken soup, the onion, and the sour cream to the remaining stuffing in the bowl.

Step 6 –Spread the zucchini mixture in an even layer in the prepared pan.

Step 7 –Sprinkle the reserved stuffing mix on top of the bake.

Step 8 –Bake, uncovered, until cooked through and the top is golden-brown, about 40-50 minutes.

Step 9 –Serve.
