Sunrise Sausage Breakfast Casserole

Ingredients

  • butter or nonstick spray, to taste
  • 1 pound breakfast sausage
  • 1 red bell pepper, chopped
  • 4 scallions, chopped, white, light green, and dark green parts separated, divided
  • 10 eggs
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons hot sauce
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups sharp cheddar cheese, shredded, divided
  • 1 (30-ounce) package frozen shredded hashbrowns, thawed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish with the butter.

Step 3 –Heat a large skillet over medium-high heat.

Step 4 –Add the sausage to the skillet and break it into small pieces with a spoon, cooking until no pink remains, about 6-8 minutes.

Step 5 –Add the bell pepper and the white and light green parts of the scallions to the sausage and cook for 3 minutes. Transfer the sausage mixture to a plate and cool slightly.

Step 6 –In a large bowl, whisk together the eggs, the heavy cream, the mustard, the hot sauce, the salt, the black pepper, and 1/2 of the dark green parts of the scallions.

Step 7 –Gently fold 1 1/2 cups of the cheese, the hashbrowns, and the sausage mixture into the egg mixture.

Step 8 –Transfer the egg mixture to the prepared baking dish and smooth it into an even layer.

Step 9 –Cover the casserole with aluminum foil and bake for 50 minutes.

Step 10 –Remove the aluminum foil and top the casserole with the remaining cheese.

Step 11 –Increase the oven temperature to 400 degrees F and continue baking the casserole until the center is set and the top is slightly golden, about 10-15 minutes.

Step 12 –Let the casserole rest for 10 minutes.

Step 13 –Top the casserole with the remaining dark green parts of the scallions.

Step 14 –Serve.
