Ingredients

  • 11 cups popcorn, popped
  • 1 cup Spanish peanuts or raw peanuts
  • 1 1/4 cups dark brown sugar
  • 10 tablespoons unsalted butter, cut into pieces
  • 1/4 cup dark corn syrup
  • 1 teaspoon kosher salt

Directions

Step 1 –Preheat the oven to 250 degrees F.

Step 2 –Spread the popcorn in the bottom of a large, deep roasting pan and sprinkle with the peanuts.

Step 3 –In a saucepan over medium-high heat, add the brown sugar, the butter, the corn syrup, and the salt and cook, whisking constantly, until the sugar and the butter have melted and the sauce is thick and caramelized, about 2-3 minutes.

Step 4 –Pour the caramel sauce over the popcorn mixture and stir to completely coat it.

Step 5 –Bake the popcorn mixture, stirring occasionally, until it is crisp, about 45 minutes.

Step 6 –On a sheet of parchment paper, turn the popcorn mixture out in a single layer and let it cool completely.

Step 7 –Serve.
