Take Care Soup

Ingredients

  • 3 cups small pasta, cooked
  • 2 balls fresh mozzarella, cut into small cubes, divided
  • 2 tablespoons olive oil
  • 1/4 cup parmesan cheese, grated

Directions

Step 1 –In a large pot of salted boiling water, cook the pasta to al dente, according to the package directions.

Step 2 –Drain the pasta, reserving the pasta water.

Step 3 –Divide 1/2 of the cubed fresh mozzarella between four bowls.

Step 4 –Top the mozzarella with the pasta and some of the reserved pasta water.

Step 5 –Top the pasta with the remaining cubed mozzarella.

Step 6 –Drizzle the soup with the olive oil and sprinkle with the parmesan cheese.

Step 7 –Serve.
