The GOAT Chicken

Sorry to burst some bubbles, but The GOAT Chicken doesn’t actually contain goat meat. Instead, it refers to the acronym for Greatest of All Time… and it earns the name! The chicken is beautifully cooked and flavorful, but then it gets nestled into a homemade tomato and goat cheese sauce, (see, there’s more than one reason for the name) that’s rich, tangy, and creamy all at once! There’s an overwhelming amount of flavor in even the smallest bite of The GOAT Chicken. That’s why it’s just the best!

Ingredients

  • 2 chicken breasts, boneless, halved
  • 1/2 teaspoon garlic powder
  • kosher salt, to taste
  • black pepper, to taste
  • 2 tablespoons olive oil, divided
  • 1 (12-ounce) carton cherry tomatoes
  • 3 cloves garlic, minced, sliced, or roughly chopped
  • 2 shallots, sliced
  • 1 (4-ounce) log goat cheese
  • 1/2 teaspoon dry Italian seasoning
  • fresh basil or parsley, optional, to taste, torn, for garnish

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Preheat an oven-safe skillet over medium heat.

Step 3 -Season the chicken halves evenly with the garlic powder, the salt, and the black pepper.

Step 4 -When the skillet is hot, add 1 tablespoon of the olive oil.

Step 5 -Add the chicken halves and cook until just browned and cooked through, with the meat reaching an internal temperature of 165 degrees F, about 3-4 minutes per side.

Step 6 -Transfer the chicken halves to a plate.

Step 7 -Add the tomatoes, the minced garlic, and the shallots to the hot skillet.

Step 8 -Nestle the goat cheese log in the center of the skillet.

Step 9 -Season the tomato mixture with the salt, the pepper, and the Italian seasoning.

Step 10 -Drizzle the tomato mixture and the goat cheese with the remaining olive oil.

Step 11 -Bake until the tomatoes are softened and the goat cheese is slightly melted, about 35 minutes.

Step 12 -Optionally, transfer the skillet from the oven and, using a fork, mash the tomato mixture and the goat cheese together to form a creamy tomato sauce.

Step 13 -Top with the fresh basil.

Step 14 -Serve the chicken with the goat cheese and the tomato mixture.
