Ingredients
For the cakes:
- 2/3 cup shortening
- 1 1/4 cups sugar
- 2 eggs
- 2 1/2 cups flour
- 1/2 cup cocoa powder
- 1 1/4 teaspoons baking soda
- 1/4 teaspoon cream of tartar
- 1 1/4 teaspoons vanilla
- 1/4 teaspoon almond extract
- 1 cup milk
For the filling:
- 3 tablespoons flour
- 3/4 cup milk
- 3/4 cup solid white shortening
- 1 cup sugar
- 1 teaspoon vanilla
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease a cookie sheet.
Step 3 –Cream the 2/3 cup of the shortening, 1 1/4 cup of the sugar, and 2 eggs. Beat until light and fluffy.
Step 4 –Sift together the 2 1/2 cups of the flour, the cocoa, baking soda, and cream of tartar.
Step 5 –Mix the 1 1/4 teaspoon of the vanilla and the almond extract into the 1 cup of the milk.
Step 6 –Add the dry ingredients mixture and the milk mixture to the creamed mixture, a little at a time and alternating between the two, being careful not to overmix.
Step 7 –Drop the batter 1 tablespoon at a time on the prepared cookie sheet.
Step 8 –Bake until cooked through, about 10-12 minutes. Let the cakes cool.
Step 9 –On the stove, mix the 3 tablespoons of the flour and the 3/4 cup of the milk until very thick, stirring constantly. Cool to cold.
Step 10 –Beat in the 3/4 cup of the solid white shortening, 1 cup of the sugar, and the 1 teaspoon of the vanilla until light and fluffy.
Step 11 –Sandwich your cakes with the filling and serve!
