Ingredients

For the brownies:

  • 1 (4-ounce) bittersweet chocolate baking bar, chopped
  • 3/4 cup salted butter
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 (1-ounce) bottle red liquid food coloring
  • 2 teaspoons vanilla extract

For the cream cheese frosting:

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup salted butter, softened
  • 6 cups confectioners’ sugar
  • 2 teaspoons vanilla extract

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line the bottom and sides of a 9×9-inch baking dish with aluminum foil, allowing about 2-3-inches to extend over the sides of the dish.

Step 3 –Lightly coat the foil with nonstick cooking spray.

Step 4 –In a large microwave-safe bowl with the microwave on the high setting, add the chopped chocolate and 3/4 cup of the butter and, in 30-second intervals, microwave the mixture, stirring between each interval, until the mixture is melted and smooth, about 1 minute 30 seconds-2 minutes.

Step 5 –Add the granulated sugar to the melted chocolate mixture and whisk to combine.

Step 6 –Add the eggs, 1 at a time, to the chocolate mixture and whisk just until blended after each addition.

Step 7 –In a medium bowl, add the flour, the baking powder, and the salt and whisk to combine.

Step 8 –Add the flour mixture, the red food coloring, and 2 teaspoons of the vanilla extract to the chocolate mixture and gently stir just until well-combined.

Step 9 –Evenly pour the brownie batter into the prepared baking dish.

Step 10 –Bake until a toothpick inserted into the center comes out with only a few moist crumbs, about 25-30 minutes.

Step 11 –Transfer the baked brownies from the oven to a wire rack and let them cool completely, about 2 hours.

Step 12 –While the brownies cool, in a large bowl of a stand mixer fitted with a paddle attachment, add the cream cheese and the remaining butter and beat on medium speed until creamy.

Step 13 –With the mixer speed reduced to low, gradually add the confectioners’ sugar to the cream cheese mixture and beat until blended.

Step 14 –Add the remaining vanilla extract to the frosting mixture and beat to combine.

Step 15 –With the mixer speed increased to medium-high, beat the frosting mixture until light and fluffy, about 1-2 minutes.

Step 16 –With a sharp knife, cut the baked brownies into serving-sized squares.

Step 17 –With a piping bag fitted with a large star tip or with a spatula, evenly add the frosting mixture to the top of the baked brownies.

Step 18 –Serve.
