Turkey Time Chili

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 large white onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground turkey
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon cayenne pepper
  • salt, to taste
  • freshly ground black pepper, to taste
  • 4 cups chicken broth
  • 1 (15-ounce) can corn kernels, drained
  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 avocado, diced, for topping

Directions

Step 1 –In a large pot over medium heat, add the olive oil.

Step 2 –Add the onions to the heated oil and sauté, stirring frequently, until they are translucent, about 6-8 minutes.

Step 3 –Add the garlic to the onions and cook, stirring frequently, until it is fragrant, about 1 minute.

Step 4 –Add the ground turkey to the onion mixture and cook, while crumbling the meat, until the turkey is no longer pink, about 5-7 minutes.

Step 5 –Add the cumin, the coriander, the cayenne pepper, the salt, and the black pepper to the turkey mixture and cook, stirring frequently, until the spices are fragrant, about 1-2 minutes.

Step 6 –Add the chicken broth to the turkey mixture and bring to a simmer, stirring occasionally.

Step 7 –Reduce the heat to low and simmer the soup until the flavors develop, about 30-35 minutes.

Step 8 –Add the corn and the white beans to the soup and simmer, stirring occasionally, about 2-3 minutes.

Step 9 –Serve the chili, topped with the avocado.
