Ultimate Chicken Potato Bake

Ingredients

  • 1 pound Yukon Gold potatoes, unpeeled, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons Creole-style seasoning, divided
  • 2 pounds chicken breasts, boneless, skinless, and cut into 1-inch cubes
  • 1/2 cup plain whole-milk strained yogurt, such as Greek
  • 1 teaspoon kosher salt
  • 1 red bell pepper, seeded and coarsely chopped
  • 1 small yellow onion, coarsely chopped
  • 4 ounces sharp cheddar cheese, shredded, about 1 cup
  • 3 slices bacon, cooked and crumbled
  • 3 scallions, thinly sliced
  • sour cream, to taste, for serving
  • hot sauce, to taste, for serving

Directions

Step 1 –Preheat the oven to 425 degrees F with racks in the middle and upper positions.

Step 2 –Toss together the potatoes, the olive oil, and 1 tablespoon of the Creole seasoning in a 9×13-inch baking dish.

Step 3 –Bake the potato mixture on the middle rack, making sure to stir the potatoes halfway through cooking, until the potatoes are tender and easily pierced with a knife, about 30-35 minutes.

Step 4 –While the potatoes cook, mix the chicken, the yogurt, the salt, and the remaining Creole seasoning in a large bowl, stirring to combine.

Step 5 –Chill the chicken mixture while the potatoes cook.

Step 6 –Once the potatoes are fully cooked, transfer the baking dish from the oven.

Step 7 –Add the chicken mixture, the bell pepper, and the onion to the baking dish with the potatoes and toss to combine.

Step 8 –Return the baking dish to the oven’s middle rack and bake until the chicken is cooked through at 165 degrees F in the thickest part, about 30-35 minutes.

Step 9 –Transfer the baking dish from the oven and switch the oven to broil.

Step 10 –Top the potato and chicken mixture evenly with the cheese, the cooked bacon, and the scallions.

Step 11 –Return the baking dish to the oven on the top rack and broil until the cheese is melted and bubbly, about 2 minutes.

Step 12 –Add the sour cream and the hot sauce and serve.
