Ultimate Comfort Breakfast Casserole

The Ultimate Comfort Breakfast Casserole gets its title by adapting one of the most underrated yet universally beloved breakfast dishes: chicken and waffles. We’re not sure who realized that crispy, meaty fried chicken and fluffy waffles drizzled with maple syrup make for a match made in heaven, but that person is a hero. And here the breakfast champions are together again, this time in casserole form! Infused with butter and maple syrup right from the start, Ultimate Comfort Breakfast Casserole really does pick you up on even the roughest mornings. In fact, it makes rough mornings into great mornings, just like that!

Ingredients

  • 10 toaster waffles
  • 1 (25-ounce) package frozen breaded chicken
  • 8 large eggs
  • 3/4 cup milk
  • 1/4 cup maple syrup, plus more for drizzling
  • 2 tablespoons butter, melted
  • kosher salt, to taste
  • ground black pepper, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Place the waffles and the chicken on two large baking sheets.

Step 3 –Bake the waffles until golden and crispy, about 15 minutes.

Step 4 –Continue baking the chicken until warmed through and crispy, about 15 minutes more.

Step 5 –Cut the waffles and the chicken into large chunks.

Step 6 –In a large bowl, whisk together the eggs, the milk, the maple syrup, and the butter.

Step 7 –Season the egg mixture with the salt and the pepper.

Step 8 –Reduce the oven temperature to 375 degrees F.

Step 9 –In a 9×13-inch baking pan layer the waffles and the breaded chicken.

Step 10 –Pour the egg mixture over the waffles and the chicken.

Step 11 –Bake until golden and set, about 45 minutes-1 hour.

Step 12 –Serve warm with the maple syrup.
