Ultimate Summer Ring

Ingredients

For the crescent ring:

  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest, grated
  • 1 (8-ounce) can crescent roll dough sheet
  • 1 cup fresh strawberries, quartered, divided

For the lemon glaze:

  • 1 cup confectioners’ sugar
  • 2 tablespoons lemon juice

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a baking sheet with foil and spray it with cooking spray.

Step 3 –In a small bowl, add the cream cheese, the granulated sugar, 1 tablespoon of the lemon juice, and the lemon zest and mix with a handheld electric mixer on medium-high speed until well-blended.

Step 4 –Unroll the crescent dough sheet and overlap the long sides to form a 7×13-inch rectangle, firmly pressing the edges and perforations to seal.

Step 5 –Spread the cream cheese mixture over the large rectangle, leaving a 1/2-inch margin around the perimeter.

Step 6 –Evenly sprinkle 1/2 cup of the strawberries over the cream cheese layer.

Step 7 –Roll up the rectangle, starting with the long side, pinching the edge to seal.

Step 8 –Cut the roll into 12 slices and arrange the slices on the prepared baking sheet in a circle so that they’re touching slightly.

Step 9 –Bake until lightly golden-brown, about 15-20 minutes.

Step 10 –Allow the ring to cool on the baking sheet.

Step 11 –In a small bowl, add the confectioners’ sugar and slowly add the remaining lemon juice until it’s the proper consistency for drizzling. You may not need all the lemon juice.

Step 12 –Before glazing, evenly sprinkle the remaining 1/2 cup strawberries over the ring.

Step 13 –Evenly drizzle the glaze over the ring.

Step 14 –Serve.
