The gorgeous golden dressing has the zest and tang to shake you from the winter doldrums. The Ultimate Winter Salad is like a beam of sunshine in a bowl, which will leave you feeling sparkling!

Ingredients

For the apple cider vinegar dressing:

  • 1 tablespoon maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon kosher salt
  • 6 tablespoons extra virgin olive oil

For the salad:

  • 6 cups mixed greens
  • 1 cup pomegranate seeds
  • 1 shallot, thinly sliced
  • 1 Granny Smith apple, thinly sliced
  • 1/2 cup pecans, toasted or glazed
  • 2 ounces soft goat cheese, optional, crumbled

Directions

Step 1 –In a medium bowl, whisk the maple syrup, apple cider vinegar, dijon mustard, ground ginger, and salt together.

Step 2 –Slowly whisk in the olive oil 1 tablespoon at a time until an emulsion forms and the dressing is fully combined. Set it aside.

Step 3 –Place the mixed greens in a salad bowl or serving platter.

Step 4 –Top with the pomegranate seeds, shallot, apple, pecans, and goat cheese.

Step 5 –Drizzle on the apple cider vinegar dressing to taste and toss.

Step 6 –Serve.
